Short on time? Try this nourishing and gut-friendly veggie wrap packe with fiber and nutrients. 

Ingredients: 

  • 1 gluten-free wrap (I love Siete)
  • 2 tbsp hummus
  • 1 handful of spinach
  • ⅓ cup Spicy-Sweet Sweet Potatoes (page 61)
  • 1/2 of a bell pepper (slice into medium-thick strips)
  • ½ avocado

Directions:

  • Smear a thick layer of hummus onto the wrap.
  • Layer with spinach, sweet potatoes, bell peppers, and sliced avocado.
  • Roll into a log and slice down the middle.
  • Enjoy!
