Gut-Healthy Chicken Artichoke Marinara
Try this savoury comfort meal that not only tastes great but is nourishing and gut-friendly.
- 2 organic chicken breasts
- Olive oil
- Chickpea pasta (spaghetti style is great!)
- Juice from 1 lemon
- 3/4 cup cherry tomatoes, halved
- 1 Tbsp dried oregano
- Salt + pepper to taste
- 3/4 cup canned artichoke hearts
- Marinara sauce of choice (I love Rao’s)
- Dice chicken breasts and season with salt + pepper to taste.
- Saute chicken in skillet with olive oil until internal temperature reaches 165 degrees fahrenheit.
- Cook pasta according to package instructions.
- Add pasta to the skillet with chicken. Stir in remaining ingredients until heated through.
- Toss with marinara sauce and enjoy!
